YIELDS: 8-10 servings

PREP TIME: 20 minutes

COOK TIME: 45 minutes

Ingredients

For the Meatloaf:

  • 1 cup milk

  • 6 slices of bread

  • 2 lb. ground turkey

  • 1 cup (heaping) freshly grated Parmesan cheese

  • 1 tsp. Garlic powder

  • 1 tsp. Onion powder

  • 1 tablespoon butter

  • 1/4 cup minced onion

  • 2 cloves garlic, minced

  • 1/2 tsp. Salt

  • Freshly ground black pepper

  • 1/3 c. minced parsley

  • 4 whole eggs, beaten

For the Sauce:

  • 1 1/2 c. ketchup

  • 1/3 c. brown sugar

  • 1 tsp. dry mustard

Directions:

  • Preheat oven to 350 degrees (because I cook everything on 350).

  • Pour milk in a bowl and place bread slices in the milk. Allow it to soak for several minutes.

  • Melt butter in a skillet over medium heat and cook onion and garlic until onion is soft and translucent, about 5 minutes.

  • Place the ground turkey, milk-soaked bread, parmesan cheese, all seasonings, and sauteed garlic and onions in a large mixing bowl.

  • Mix the eggs and pour them in the ground turkey mixture.

  • Mix the ingredients until well combined. Place the mixture in a loaf pan or form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

  • Make the sauce: add ketchup, brown sugar, and mustard in a mixing bowl. Stir together.

  • Pour 1/3 of the mixture over the top of the loaf. Spread with a spoon.

  • Bake for 45 minutes, then pour another 1/3 of the sauce over the top.

  • Bake for another 15 minutes.

  • Slice and serve with remaining sauce.
