Mighty Meatloaf
Great meatloaf recipe for all to enjoy!

YIELDS: 8-10 servings
PREP TIME: 20 minutes
COOK TIME: 45 minutes
Ingredients
For the Meatloaf:
1 cup milk
6 slices of bread
2 lb. ground turkey
1 cup (heaping) freshly grated Parmesan cheese
1 tsp. Garlic powder
1 tsp. Onion powder
1 tablespoon butter
1/4 cup minced onion
2 cloves garlic, minced
1/2 tsp. Salt
Freshly ground black pepper
1/3 c. minced parsley
4 whole eggs, beaten
For the Sauce:
1 1/2 c. ketchup
1/3 c. brown sugar
1 tsp. dry mustard
Directions:
Preheat oven to 350 degrees (because I cook everything on 350).
Pour milk in a bowl and place bread slices in the milk. Allow it to soak for several minutes.
Melt butter in a skillet over medium heat and cook onion and garlic until onion is soft and translucent, about 5 minutes.
Place the ground turkey, milk-soaked bread, parmesan cheese, all seasonings, and sauteed garlic and onions in a large mixing bowl.
Mix the eggs and pour them in the ground turkey mixture.
Mix the ingredients until well combined. Place the mixture in a loaf pan or form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
Make the sauce: add ketchup, brown sugar, and mustard in a mixing bowl. Stir together.
Pour 1/3 of the mixture over the top of the loaf. Spread with a spoon.
Bake for 45 minutes, then pour another 1/3 of the sauce over the top.
Bake for another 15 minutes.
Slice and serve with remaining sauce.
